Sweet Potato, Kale and Peanut Stew

Ingredients
  1. 1 onion, diced
  2. 2 medium carrots, diced
  3. 1 sweet potato, diced
  4. 2 garlic cloves, minced
  5. 1 inch knob ginger, minced
  6. 1 cup kale, chopped
  7. 1 tsp cumin
  8. 1 tsp turmeric
  9. 1 tsp cayenne
  10. 1 cup red lentils
  11. 7 cup vegetable stock
  12. 1/2 cup peanut butter
  13. 1 tbsp olive oil
  14. A few sprigs cilantro and crushed peanuts for garnish
Instructions
  1. Saute onions in olive oil over medium heat until soft and translucent. Add garlic and other vegetables, saute until all vegetables have started to soften. Add tomato paste and stir to combine.
  2. Add spices, lentil and stock. Simmer for around 20 minutes, until lentils and sweet potato are soft. Add peanut butter and salt and pepper to taste.
  3. Serve over brown rice and garnish with peanuts and cilantro.
